Oil and Water Example
  • You shake oil and water together to mix, making oil droplets in water
    • Two phases come together ({{c1::liquid in liquid emulsion interface}})
    • Total energy of this system is {{c2::high}} due to {{c2::large surface area}}, but the {{c3::emulsion is unstable}} due to the {{c3::high free energy caused by the high surface area}}
  • If you leave the emulsion alone, it will {{c4::separate into two separate layers}} as this is {{c4::thermodynamically favorable}}.
  • With pharmaceuticals, we want to {{c5::maintain the unstable product (the emulsion)}}
    • To do so, we can use {{c5::surfactants}}
