What is carcinoid heart disease? Specifically how are the valves involved?

A complication of carcinoid syndrome that results in a  right-sided valvular fibrosis, caused by serotonin-induced fibrosis (collagen deposition) of these valves. Triscuspid regurgitation and pulmonary valve stenosis are often seen.
