Using the example of copper:
The material desired to be plated is used as the negative electrode (cathode). This attracts the +ve charged copper ions which reduce to form a layer of copper over the electrode.
Copper metal could also be used as the positive electrode (anode) which undergoes oxidation releasing copper ions into the electrolyte solution.
